Gwyn, the maker behind these stunning outdoor cookers, started off in a completely different business. But over time, he realized that if you don’t create something of your own, you’re always chasing someone else’s price point. That idea stuck with him—and it led him down a path toward building something totally new.

He came across someone trying to smoke food inside a wooden barrel, but they were running into problems. The wooden slats—or staves—would dry out over time, letting in too much air and throwing off the fire’s balance. It got him thinking: What if you could keep the look and charm of a barrel, but solve the issues with temperature and airflow control?

That thought was the spark.

Building a Better Barrel Grill

Gwyn began exploring ways to line the inside of a barrel with heat-resistant materials—strong enough to handle serious temperatures, and smart enough to manage airflow. The result is a beautifully engineered system built layer by layer.

Inside each unit, you’ll find:

  • A ceramic blanket that acts as a high-performance thermal barrier

  • An insulating refractory layer, which includes naturally sourced materials for extra heat retention

  • A final hot-face refractory, tough enough to withstand over 1800°C

Each layer plays its part in creating a cooker that holds heat incredibly well while staying safe and efficient to use. And because of the design, you’re not just limited to smoking or grilling. You can roast, bake, sear—and yes—even make wood-fired pizza.
