
How to Grill the PERFECT Steak Every Time (In Just 10 Minutes!)

Because cooking really is simple—and today, we’re grilling up the perfect New York strip steak in just 10 minutes!
Step 1: Start With a Good Dry Steak
First things first—grab a New York strip steak. Nothing fancy here, just your standard supermarket cut. The secret? Pat it dry. I mean really dry. Use paper towels and get rid of any moisture on the surface. This helps you get that delicious brown crust when it hits the grill. You want a dry surface to make the Maillard reaction happen—that’s the science behind that mouthwatering sear and flavor.
Step 2: Season Like You Mean It
Now for the seasoning—keep it simple but bold. We’re using a classic trio:

Garlic powder
Sprinkle each one generously over the steak, then pat it in so it really sticks. Flip it and do the same on the other side. And don’t forget those edges—roll the steak around in the leftover seasoning so every inch is covered. The goal is a fully seasoned, flavor-packed piece of meat.
Step 3: Crank Up the Heat
Let’s head out to the grill. You want it HOT—like, all the way up. If you’re using a gas grill, crank that heat to high. Mine gets up to about 550°F, which is perfect.
Once it’s hot, find that sizzling zone, and lay your steak down. You want to hear that sizzle—that’s how you know you’re getting a good sear. Close the lid and let it cook for about 2 minutes and 30 seconds.
Step 4: Make Those Grill Marks Pop
Time to check the bottom. You’re looking for those beautiful brown grill marks. Give the steak a slight turn (about 45 degrees) to create that restaurant-style diamond pattern, then close the lid again.
After another 2 minutes and 30 seconds, it’s flipping time! Press the steak down again to get good contact on the other side. Close the lid and let it cook for a few more minutes.
Step 5: Cook to Temperature, Not Time
The best way to grill a steak? Use a thermometer. Around the 7-minute mark, start checking the internal temperature. For a perfect medium rare, you want to pull it off the grill at about 115°F—it’ll rise to 125°F while it rests.
That’s the carryover cooking magic. Trust it!
Step 6: Let It Rest (This Is Important!)
Once your steak’s off the grill, let it rest for 10 minutes. Don’t skip this step! Resting helps all those tasty juices stay locked in. And while it rests, you’ll notice juices start to seep out a bit—that’s a great sign.
Step 7: Slice and Serve
After resting, slice the steak right down the middle. You should see a gorgeous pink center and crispy brown edges. That’s the perfect medium rare. Cut it into strips, chunks, or however you like to serve it.
